Caol Ila distillery was founded in 1846 and is located on the island of Islay, near Port Askaig. The name of the distillery literally means “sound of Islay”, if translated from Gaelic. Caol Ila is one of the lighter style Islay malts, unlike its heavy-weight neighbours Lagavulin and Laphroaig. Besides single malt, Caol Ila whisky is also a cornerstone of different blends like Johnie Walker Black Label, and Johnie Walker Green Label.

For those of you, who are not very familiar with Caol Ila 12yr here is a fable: “Goldilocks, a Scottish man with curly blond hair and wearing a kilt, walked into a pub and found three tumblers of whisky sitting at an empty table. Being a curious chap, he sat down and began sampling the single malts. The first one, a Bowmore 12 year, was nice, but a little gentle for his tastes. He jumped to the third tumbler, filled with Laphroaig 10 year. The iodine and tar notes in this one were too much! He already had enough hair on his chest, thank you very much. Finally, he took a sip from the middle tumbler, a Caol Ila 12yr. Ahh, just right‚Ķ ” That being said, Caol Ila, launched in 2002 is a magnificent whisky full of light and freshness, retaining the true Islay character, spectacular whisky!

NOSE: Light peat smoke, citrus, floral and vanilla notes.

PALATE: Smooth, sweet, peaty, spicy, mouth watering acidic quality.

FINISH: Long, peppery, smoky, but smooth.

Last note: if you really want to experiment with your whisky, take 2/3 of Talisker and 1/3 of Caol Ila, mix it together and you will have one hell of an interesting dram!
