Domaine des Hautes Glaces is nestled beautifully in the foothills of the Alps, a few hours south of Grenoble, east of the Rhône Valley. A dream-come-true for Frédéric Revol who, with help from friends and colleagues, bought and refurbished an ancient estate. Situated at nearly 3,000 feet, it lies near the hamlet of Saint Jean d’Hérans in the Accarias Pass between the cliffs of Vercors to the west and the Alpine peaks to the east. Fertile lands exist in this extreme terrain, and the combination of water and

earth allows this organic estate to grow excellent grains that Frédéric, who considers himself an agronomist, distills into fine whisky.

The 40 hectare domaine is divided into five distinct climats. The organic barley that goes into Les Moissons Single Malt Organic Whisky is from la Combe d’Andrieu Рa southern-facing plot of light and sandy alluvial soils.

There are two pot stills at the Domaine – a 24hl wash still and a 6hl spirit still. Domaine des Hautes Glace Single Malt Organic French Whiskey is distilled from 100% organic barley, this is a blend of 3 vintages – 2010, 2011, and 2012. It is aged in a mix of ex-Cognac, ex-Marsanne/Roussanne, and new Tronçais casks. It is bottled, non-chill filtered, at 41.7% abv with no caramel or other colorings or additives.

NOSE: Dried grass, pea shoots, green plantain, and dried apricot.

Palate: Bright, but has a surprising richness and creaminess. It shows riper banana, lemon zest, spices like clove and juniper.

FINISH: Watermelon leading back into that dried straw. Unusual and delicious.
