Description
Noah’s Mill is a product of Kentucky Bourbon Distillers, an indy bottler until recently, after they acquired the Old Willet distillery. They source bourbon from different distilleries, age it and bottle under their own brand names: Willet, Noah’s Mill, Rowan’s Creek, etc).
Noah’s Mill is a handmade bourbon, which used to be bottled at 15 years of age, and now carries no age statement, and contains bourbons from 4 to 20 years old. It is composed of barrels that range from low to high rye content, and wheated bourbon. Each batch is made from about 20 barrels (small batch indeed!). It is barrel proof, bottled at 57.15% alc/vol.
NOSE: Toffee, dark coffee, raisins, oak.
PALATE: Cocoa, dried fruit, vanilla, roasted nuts, spice with a hint of earthiness.
FINISH: Long, dark chocolate, spice, and oak.
Final note: It’s a big bourbon, not for the faint-hearted, it’s complex and lacks the burn that some barrel proof bourbons do. Will open up even more with a wee drop of water.
