The Sonoma County Distilling Company is a distillery founded in 2010 in the heart of Sonoma County tasked with producing high-quality whiskeys for the discerning whiskey drinker. Grain to Glass is our focus- every level of the production is handled in-house, including the mashing and fermentation of grains, direct-fired alembic pot distillation, small barrel aging, and packaging. Through hard work, time-honored techniques, and our ideal location in picturesque Sonoma County, we are California’s premier whiskey distillery.
Our cornerstone spirit, Sonoma Rye Whiskey, starts with a unique, 100% rye mash bill, relying on traditional techniques like direct-fire alembic stills and hand separation, overseeing production from grain to glass. Aged in new charred American oak barrels and finished in old wood, this whiskey features hints of vanilla, allspice, and white pepper. The final product is the result of the hard work of our intelligent, dedicated team, who proudly ignore modern trends in the pursuit of a new legacy steeped in the old ways here at Sonoma County Distilling Company.
On the nose, rye spice explodes from the glass, followed by a nice caramel, some caky vanilla notes, and cinnamon. There is a bit of dill hanging out in the background with a bit of citrus. The rye accelerates across the palate, towing some dill, caramel, cinnamon, and vanilla. Some raw grain notes float about on the end before moving into the finish. The grains on the tail end of the palate push along the aftertaste with some dill and caramel on a long, slow journey.
