Description

Still Waters Distillery is small operation in Concord Ontario, which is just north of Toronto. They currently make three whiskies: Single Malt, Rye (made from 100% Canadian grown rye that makes up at least 51% if the grain bill), and Canadian (a blend of their base whiskies).

Stalk & Barrel Canadian Rye Whisky is made from locally grown 100% Ontario rye grain. It is mashed, fermented, and distilled by hand in small batches in the small copper pot still. Stalk & Barrel Canadian Rye Whisky is aged in ex-bourbon casks on site for a minimum of three years. Each barrel is bottled individually as a single cask offering in individually numbered bottles, offered at either cask strength or at 46% alc./vol. No additives nor coloring and no chill-filtering.
